I haven’t done testing but I’ve heard that any ph decreases from coffee would be short lived. Sulfur would have a longer lasting effect but takes longer. Ammonium or aluminum sulfate are chemical options. Figs are pretty tolerant of different ph levels. I don’t imagine 8 would cause any issues.
